These Red velvet cupcakes can be stored in the fridge in an airtight container for up to a week. In order to keep that moisture cover them with plastic wrap.

Description

These fluffy & delicious Red Velvet Cupcakes are the absolute treat for any party! They are topped with a creamy rich cream cheese buttercream.

Ingredients

Cupcakes

  • 1/3 cup unsalted butter
  • 1 1/2 cup sugar
  • 3/4 cup vegetable oil
  • 2 tsp vanilla extract
  • 2 eggs
  • 1 cup buttermilk
  • 2 1/2 cups all-purpose flour
  • 2 tbsp cocoa powder
  • 1 tsp Baking Soda
  • 1 tsp salt
  • 3 tbsp red food paste colour

Cream Cheese Frosting

  • 300gr cream cheese
  • 1/2 cup unsalted butter
  • 5 cups icing sugar
  • 1 tsp vanilla

Instructions

  1. Cupcakes: In a bowl cream together your butter and sugar for about 2 minutes.
  2. Add in your oil, vanilla, buttermilk and eggs and keep mixing until combined.
  3. Add in your salt, baking soda, cocoa powder and all purpose flour. Mix until nice and smooth.
  4. Add in your red food paste and mix!
  5. Line with paper cupcake cases a 12 holes muffin tin. Fill each cupcake case with about 2/3 full.
  6. Bake for 20 minutes at 175°C (until a toothpick inserted into the centre comes out clean).
  7. Buttercream: In A bowl add in your cream cheese and butter and mix until creamy for about 2 minutes.
  8. Add in your icing sugar & vanilla extract and mix on medium to high speed for 4 minutes until smooth.
  9. Decorate your cupcakes using your buttercream and serve right away.
