These Oreo Cupcakes are by far one of my favourite recipes as they are topped with a rich Oreo Cream Cheese Frosting! They are perfect for parties, candy table and of course as an afternoon snack.

They can be stored in an airtight container or covered with plastic wrap in the fridge and last for up to 5 days! Covering the cupcakes helps them to stay moist and delicious.

Description

If you love OREO as much as I do then you will love these adorable cupcakes. They are moist and are topped with a creamy rich oreo frosting.

Ingredients

Cupcakes

  • 125gr all-purpose flour
  • 125gr sugar
  • 1/4 tsp bicarbonate soda
  • 1/2 tsp baking powder
  • 125gr unsalted butter (room temperature)
  • 2 eggs
  • 2 tbsp milk
  • 1/4 teaspoon vanilla extract

OREO Buttercream

  • 150gr unsalted butter (room temperature)
  • 200gr cream cheese
  • 600gr icing sugar
  • 1 tsp vanilla extract
  • crushed OREO cookies
  • More OREO cookies for decor

Instructions

Cupcakes:

  1. In the bowl of a stand mixer or in a big mixing bowl beat your butter and sugar until creamy (about 2 minutes).
  2. Add in your eggs and vanilla extract and mix for 1 more minute.
  3. Then add in your milk, baking powder, baking soda and flour and mix until a thicker butter is formed.
  4. Prepare a 12-case muffin tin and place an OREO cookie on the bottom of each muffin case.
  5. Scoop out the mixture evenly, about 1 tbsp in each case.
  6. Bake for 20 minutes at 175°C (until a toothpick inserted into the centre comes out clean)

OREO Buttercream:

  1. In the bowl of a stand mixer or in a big mixing bowl beat your butter and cream cheese for 2-3 minutes until nice and fluffy.
  2. Then add in your vanilla extract and icing sugar. Keep mixing until incorporated.
  3. Then turn the mixer on high and mix for 4 more minutes.
  4. Add in your OREO cookie crumbs and fold them using a spatula.
  5. Place the mixture in a piping bag and decorate your cupcakes.
  6. Last step, add on top of each cupcake an Oreo cookie.
