Description

If you love salted caramel everything as much as I do then this No-Bake Salted Caramel Cheesecake is the perfect dessert for you! Super creamy rich flavour filled with salted caramel delight and super easy recipe, this is without question the best No-Bake Salted Caramel Cheesecake EVER!

Ingredients

Cookie Base

  • 250gr digestive biscuits
  • 100gr melted butter

Filling

  • 400 ml heavy cream
  • 250gr cream cheese
  • 40gr icing sugar
  • 3tbs Salted Caramel Sauce (you can find the recipe on my website or on my YouTube channel)

Instructions

Cookie Base

  1. Crush cookies in a mini chopper.
  2. Then add the crushed cookies and melted butter in a bowl & mix until the consistency looks like wet sand.
  3. Pour the cookie mixture in a springform 9″ baking tin and press cookies to the base and on the sides of the form to create like a little wall for your cheesecake filling to settle in later.

Filling

  1. In a large mixing bowl add in your cream and icing sugar and mix until stiff peaks consistency using an electric hand mixer. (about 2 minutes)
  2. Then add in the cream cheese and the salted caramel sauce and mix well.
  3. Scrape the sides of the bowl and give the mixture a good stir.
  4. Then place the filling on top of the cookie base and smooth it out using a spatula.
  5. Chill in the fridge for at least 3 hours!
  6. After chilling the cheesecake you can take it out of the form and decorate with some salted caramel sauce!
