This cheesecake only needs few simple ingredients that everyone has in their pantry! It starts of with a biscuit base and then is topped with a cream cheese filling!!!

This cheesecake lasts up to 5 days in the fridge in an airtight container or covered with plastic wrap! It stays super rich and creamy.

Description

This No bake cheesecake is perfect for you..its rich, creamy and super summer-ish! Make sure to give this recipe a try & I am sure you will love it!

 

Ingredients

Biscuit

  • 200gr cookie crumbs
  • 100gr melted unsalted butter

Cheesecake Filling

  • 500gr cream cheese
  • 120gr powdered sugar
  • 2 tsp lemon juice
  • 1 tsp vanilla extract
  • 400ml whipping cream

Instructions

  1. Cookie Base: In a bowl mix your butter and cookies until the consistency looks like wet sand.
  2. Prepare a spring form cheesecake pan and pour the cookie mixture in. Smooth it out evenly and then press firmly using a spoon or the bottom of a cup.
  3. Filling: In a large mixing bowl add in your cream and powder sugar and mix using an electric hand mixer until stiff peaks. (about 3 minutes)
  4. Add in your vanilla extract, lemon juice and cream cheese. Mix until incorporated.
  5. Lastly, pour the mixture over the cookie base. & smooth out
  6. Chill for at least 4 hours, remove from the form and decorate however you want!
