About Me!

Hi, thanks for stopping by, my name is Anna Kosti and I am 18 years old. I live in Larnaca, Cyprus, with my family and I am still going to high school. I fell in love with baking since the age of 9! I started with simple recipes to making complicated and fascinating desserts. I am planning to join university next year, overseas, to become a professional pastry chef.

This easy Mint Chocolate Chip Ice Cream takes less than 10 minutes to prepare and can be made with just 5 ingredients.

Whipped cream and sweet condensed milk make an easy base for a creamy and rich ice cream. However by adding any flavourings to this mixture take it to a different direction.

In this case we are going to be using mint extract in our base, some green food colouring and also A LOT of Chocolate Chips. Because who doesn’t love chocolate?!

Don’t worry cause this recipe does NOT NEED ice cream maker. It’s so simple to make and the only thing that you need is a hand mixer or a stand mixer!

If you like to make it more fancy then you can add some white chocolate chips too or even some chopped nuts.

Also depending on how much you like mint you can add more or less mint extract, for a stronger or more mild flavour.

This Mint Chocolate Chip Ice Cream lasts about a month in the freezer covered in plastic wrap or saved in an airtight container.

Tip: For a more creamy texture while you’re whipping your cream don’t make it stiff peaks consistency BUT soft peaks. This will create a more smooth and rich texture.
