These Super Chocolatey Lotus Biscoff Brownies are the absolute treat for any occasion. They are topped with Lotus Biscoff Spread swirls and the combination together with the gooey brownies on the bottom is just INCREDIBLE! They are rich, fudgy and delicious!

Brownies, as many of you read on my blog, are one of my favourite things to eat & bake. They are chocolatey, gooey, fudgy, and perfect. Especially when you warm them up in the microwave and add a scoop of ice-cream on top!.

This Lotus Biscoff Brownies recipe has the flexibility to combine it with any other spread you want, like Nutella, mars spread, caramel sauce etc. It goes really well with many like the ones above  spreads above however the one I suggest you to try first is this one. There is nothing else with that kind of heavenly taste it has.

Those crushed cookies on top add a different texture to the brownie with the crunchy element! Make sure to give this recipe a try and be prepared to be obsessed!

Try to follow all the steps I explain below to get the best result possible! I advice you to make this recipe and share it with Family and Friends. They are perfect for a lot of occasions and the most important they last long at room temperature.

You can store them at room temperature for up to a week in an air tight container!

Lotus Biscoff Brownies

These Super Chocolatey Brownies are topped with Lotus Biscoff Spread swirls and the combination together with the gooey brownies on the bottom is just INCREDIBLE!


  • 200gr unsalted butter
  • 200gr dark chocolate
  • 200gr sugar
  • 4 eggs
  • 125gr all purpose flour
  • 50gr cocoa
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1/2 cup Lotus Biscoff Spread (slightly melted in the microwave)
  • Couple of Lotus cookies crushed (for the top)


  1. Preheat your oven at 175°C.
  2. In a microwave safe bowl melt your butter and dark chocolate completely.
  3. In another big mixing bowl add your sugar and eggs and mix using a whisk until they are nice and frothy (for about 2 minutes).
  4. Add the flour, cocoa powder, salt and vanilla extract and whisk until combined.
  5. Add your butter and chocolate mixture and continue mixing until everything is well incorporated.
  6. Grease with non stick spray a 7 inch square tin. Gently pour your mixture in your tin and smooth out on top.
  7. Microwave for about 1 minute your lotus biscoff spread until melted. Pour it over your brownie mixture and using a knife make swirls on top!
  8. Also crush a couple of cookies on top.
  9. Bake your brownies at 175°C for 30-35 minutes until the sides are baked and the middle is still a bit soft.
  10. Allow the brownies to cool completely and then cut it into about 9 pieces.
