Hi, thanks for stopping by, my name is Anna Kosti and I am 18 years old. I live in Larnaca, Cyprus, with my family and I am still going to high school. I fell in love with baking since the age of 9! These Lemon Muffins are absolutely incredible, they are light, fluffy and have a pop of citrusy that just creates the perfect combo of sweet and sour. Make sure to give these a try.

You can also make these muffins with blueberries or even raspberries. It will add a kick to your muffins and make them even more delicious. You can also make them more citrusy by adding more lemon zest and lemon  juice in the mixture.

Description

These Lemon Muffins are absolutely incredible, they are light, fluffy and have a pop of citrusy. Make sure to give these a try.

Ingredients

Muffin

  • 200gr granulated sugar
  • 110gr unsalted butter (room temperature)
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • lemon zest from 1 lemon
  • 2 tsp lemon juice
  • 2 1/2 cups flour (all-purpose)
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 cup milk

Glaze

  • 1 cup icing sugar
  • 2 tbsp lemon juice

Instructions

  1. In a bowl add butter and sugar and mix well.
  2. Gradually add in the eggs and mix.
  3. Add vanilla, lemon juice, lemon zest and mix until incorporated.
  4. Add in the dry ingredients and mix until fully combined.
  5. Divide the mixture in 12 muffin cases and bake for 20 minutes at 175°C.
  6. For the glaze – mix icing sugar and lemon juice. Drizzle the glaze on top and if you want also add some lemon zest to enhance the lemon flavour.
