This lemon cheesecake is an absolute dream!!! It’s not only rich and creamy but also super lemony and delicious. It has a super refreshing flavour and its so simple to make! It’s the perfect cheesecake anyone could ask for.

Description

This lemon cheesecake is an absolute dream!!! It’s not only rich and creamy but also super lemony and delicious. It has a super refreshing flavour and its so easy to make! It’s the perfect cheesecake anyone could ask for.

Ingredients

Cookie Base

  • 2 ½ cups cookie crumbs
  • 150gr melted butter

Filling

  • 700gr cream cheese
  • 1 cup sugar
  • 3/4 cup whipping cream
  • 1/3 cup lemon juice
  • 3 tbsp lemon curd
  • 2 tbsp all-purpose flour
  • zest from 1 lemon
  • 2 tsp vanilla
  • 3 drops yellow food paste colouring
  • 5 eggs

Instructions

Cookie Base

  1. In a bowl add your cookies and melted butter & mix until the consistency looks like wet sand.
  2. Pour the cookie mixture in a springform baking tin and press cookies to the base and on the sides of the form to create like a little wall for your cheesecake filling to settle in later.
  3. Bake the cookie base for 10 minutes at 175°C. Then leave it to cool down fully.

Filling

  1. In a large mixing bowl add in your cream and sugar and mix until stiff peaks consistency using an electric hand mixer. (about 2 minutes)
  2. Add in your cream cheese and vanilla and mix well.
  3. Then add in your lemon juice, lemon curd, lemon zest, yellow colour, flour and eggs.
  4. Mix until fully incorporated!
  5. When your mixture is ready, pour over your cookie base and smooth out evenly.
  6. Bake for 55-60 minutes at 160°C.
  7. Let your cheesecake cool at room temperature and then chill for at least 3 hours before serving.
  8. Decorate however you want and serve!!!
