This Gluten Free Vanilla Cake recipe is so Simple and so Delicious! You can make it in less than an hour and it just needs few simple ingredients. It’s also incredibly moist and fluffy!

You can also decorate it with some gluten free american buttercream and take it to another level.

This cake is perfect or any birthday party or a special occasion at your house! It’s so impressive and easy to make that it will blow your mind.

You can decorate it however you want and even get creative and use any kind of sugary decorations or sprinkles.

This cake can be stored in the fridge for up to 3 days in an airtight container. It’s better if you have it covered with plastic wrap in order to keep that moisture and creaminess.

You can remove it from the fridge a few hours before serving just to come down to room temperature.

Description

This Gluten Free Vanilla Cake recipe is so Simple and so Delicious! You can make it in less than an hour and it just needs few simple ingredients.

Ingredients

Cake Sponge

  • 2 2/3 cup gluten free flour
  • 2 cups sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup greek yoghurt
  • 1/2 cup vegetable oil
  • 1 tbsp vanilla extract
  • 2 eggs
  • 1 cup water

Vanilla Buttercream Frosting

  • 2 cups unsalted butter, room temperature
  • 7 cups powdered sugar
  • 1 tsp salt
  • 3 tbsp heavy cream
  • 2 tsp vanilla extract

Instructions

  1. Sponge cake: In a bowl you will mix your eggs and sugar until nice and fluffy.
  2. Add in your oil and vanilla and mix until incorporated.
  3. Add in your water, baking powder and salt.
  4. Add in also your yoghurt, flour and mix until everything is well combined.
  5. Grease 2 7-inch cake tins with non stick cooking spray and line with parchment paper.
  6. Divide the batter among the two tins equally and smooth out on top.
  7. Bake for 35-40 minutes at 175°C (until a toothpick inserted into the centre comes out clean).
  8. Buttercream: In a big mixing bowl you are going to add your butter and you are going to cream tis using a mixer for about 3-4 minutes.
  9. Add in your icing sugar and vanilla extract. Mix until fully incorporated.
  10. Lastly add in your cream and continue mixing for about 3 minutes until nice and creamy.
  11. Now feel free to decorate your cake however you want or you can watch my video and decorate it like mine.
