These berry sweet rolls recipe is the ideal summer dessert! They are filled with mixed berries and wrapped with the most fluffy dough you’ve ever tried! They are fluffy, filled with berries juice and topped with a sugary glaze!

I admit that this is one of my favourite rolls recipe ever!!! The only thing you need to do it’s follow my directions and you will have excellent results!

The Best part of these Berry Sweet Rolls is that you can make them any season you want, as you can use both frozen and fresh berries! I made my ones with frozen berries and they turned out amazing. However you should be careful and remove any extra juice that they will release. This will make the dough easier to roll and cut!

I advice you to do the dough the same day that you are making the rolls so it will not rise too much. Due to the yeast, if the dough rests too long then it will add bitter flavour to your dough. So make sure to leave the dough just enough time until double in size!

Also, if you are using frozen berries then place them in a sift over a bowl so any extra juice will fall into the bowl while coming to room temperature! This will keep them fresh especially if you store them in the fridge!

Before serving you can just pop these Berry Sweet Rolls in the microwave for a few seconds to warm up!

You can store the rolls in an airtight container in the fridge for about 3-4 days! You can take them out of the fridge about 2 hour before serving!

Description

These rolls are the ideal summer dessert! They are filled with mixed berries and wrapped with the most fluffy dough you’ve ever tried! They are fluffy, filled with berries juice and topped with a sugary glaze!

Ingredients

Dough

  • 1 cup warm milk
  • 2/3 cup sugar
  • 2 tbsp dry yeast
  • 1/2 cup unsalted butter (room temperature)
  • 2 eggs
  • 1/2 tsp salt
  • 4 1/2 cups all-purpose flour

Filling

  • 350gr of frozen mixed berries/ or fresh berries
  • 2/3 cup sugar
  • 2 tbsp cornstarch

Glaze

  • 1 cup icing sugar
  • 3 tbsp milk

Instructions

  1.  Dough: In a large bowl or in a bowl of a stand mixer place your warm milk, sugar and yeast (when the milk is hot it will help your yeast to rise faster). Mix using a spoon just until everything is combined. Cover with a towel or plastic wrap and let the yeast rise for 5-10 minutes until there is a bubbly layer on top.
  2. When your yeast is nice and frothy add in all of the ingredients, the butter, eggs, flour and last one the salt so your yeast will stay activated. Mix everything using either a hand mixer or a stand mixer until a dough its formed.
  3. After place the dough on a lightly floured surface snd kneed by hand for about 2 minutes until the dough is elastic. Form the dough in a ball and place it into a lightly greased bowl. Cover with plastic wrap and let it rise for about 2 hours until double in size (in a warm and dry place)!
  4. Grease with non stick cooking spray a 9×13 inch baking tin and set it aside until we prepare our rolls.
  5. Preheat your oven at 175°C.
  6. Filling: Meanwhile in a small bowl add your fresh or frozen berries , cornstarch and sugar! Mix using a spoon until incorporated.
  7. Turn your dough onto a lightly floured surface and start rolling it out into a rectangular shape, this will make it easier to roll afterwards. Make sure that the dough is evenly thick and smooth! Place the filling on the dough and start from one end rolling tightly until you reach the other end. (At this point if you are using frozen berries there might be juicy coming off from the sides but don’t worry about that its normal)
  8. Cut your rolls about 2-3 cm each and place them in your tin. After cover them with plastic wrap and let them rise for about 30 minutes.
  9. Bake at 175°C for about 30-35 minutes.
  10. Glaze: In a small bowl place both the icing sugar and your milk and mix until a smooth and shining glaze is formed.
  11. Pour your glaze over your rolls and Voila!!!
