About Me!

Hi, thanks for stopping by, my name is Anna Kosti and I am 18 years old. I live in Larnaca, Cyprus, with my family and I am still going to high school. I fell in love with baking since the age of 9! I started with simple recipes to making complicated and fascinating desserts. I am planning to join university next year, overseas, to become a professional pastry chef.

This is by far one of my favourite Christmas Cookies recipes! It’s super easy to make and so tasty. Also, I love them dipped in white chocolate because it gives them sweeter flavour in combination with the ginger.

This recipe reminds so much of Christmas and holidays, kids love them and I am sure you will too.

Cookies are not only perfect with tea and hot chocolate but with some milk as well. Milk and cookies is the absolute combo. Make sure to try this ginger cookies recipe and let me know if you like them.

You can also dip these cookies in dark chocolate or even drizzle on top some caramel sauce. As it is Christmas season grab the chance and be creative. My favourite part when making cookies is decorating especially on Christmas with my family and friends.

You can store the cookies in an airtight container at room temperature. They last for up to a week but I don’t think anyone could resist from eating them so long.

Description

These delicious Christmas cookies are soft and chewy inside with a hint of ginger balanced out with a slight sweetness from the white chocolate.

Ingredients

  • 3/4 cup Unsalted Butter (at room temperature)
  • 1 cup Sugar
  • 1/3 cup Honey
  • 1 Egg
  • 2 1/2 cups All-Purpose Flour
  • 2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 tsp Ground Ginger
  • 1 tsp Cinnamon
  • 1/2 tsp Ground nutmeg
  • white chocolate
  • sprinkles (optional)

Instructions

  1. In a mixing bowl add in your butter, sugar and cream them using a hand mixer for about 2-3 minutes. When they look nice and creamy add in your egg and honey and continue mixing.
  2. Then add in your salt, cinnamon, ginger, nutmeg, baking soda and flour. Mix until a dough is formed.
  3. Line with parchment paper a baking tray and roll out your  cookies at about 1 tbsp each. (Leave enough space for the cookies to expand in the oven).
  4. Bake for 10-12 minutes at 175°C.
  5. After your cookies have cooled down completely, dip them in some melted white chocolate and decorate them with sprinkles.
  6. Enjoy. Serve with milk or hot drinks!
