Cookies are an easy snack to prepare that has multiple uses like work, school etc. They can be enjoyed for breakfast, afternoon snack or even for dessert after dinner if you like chocolate as much as I do.

These Nutella stuffed cookies start with my favourite sugar cookie recipe as a base to cover the Nutella filling. From the outside they look like an innocent butter cookie, but once you take a bite you’re in for a sweet surprise!

 

These cookies can be stored in an airtight container either in the fridge or at room temperature at a cool spot. They last up to a week but I don’t thing that they are going to be any left till then, in my family they only last a few hours!

Description

These cookies have a Crunchy outside layer and then a creamy Nutella stuffed interior! It’s absolutely mouthwatering.

Ingredients

  • 1 cup Nutella
  • 2 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter (room temperature)
  • 1/2 cup sugar
  • 2/3 cup powdered sugar
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Line a tray with parchment paper and make some Nutella dollops on it. You need to make about 30 dollops because this recipe makes 24 cookies so its better to make some extra.
  2. Then chill the tray for 30 minutes until we prepare the dough. (This will make the cookies easier to roll as the Nutella will not be runny and get outside the cookie centre)
  3. Dough: In a big mixing bowl add your butter, sugar and powdered sugar. Mix this using a hand mixer or in a stand mixer for about 2-3 minutes until creamy.
  4. Now add your egg and vanilla and mix until incorporated.
  5. Add the rest of the ingredients salt, baking soda and all-purpose flour. Mix until a dough it’s formed.
  6. Take out your Nutella dollops and start rolling out cookies. Firstly take about 1 tbsp of the mixture for each cookie and press it in your hand until its nice and flat. Place your Nutella dollop in the middle and gently connect the edges of the cookie. Now that the Nutella is sealed roll the cookie in the form of a ball. Repeat the process for the rest of the dough.
  7. You need to chill the cookie balls before baking for 15 minutes and then bake them at a preheated oven at 175°C for 15-20 minutes. (Make sure to leave enough space in the tray for the cookies to expand while baking)
