If you love berries, then this the perfect recipe for you to try! These Muffins are sweet, light and super delicious. You only need a few simple ingredients you definitely have in your pantry.

These can be prepared in less than 1 hour and I am sure your friends and family will love them. They start of with a light and soft sponge and then the berries kick in that takes these muffins to the next level.

Mixed berry muffins are ideal for an afternoon snack, for breakfast an dessert. They are also perfect to take anywhere you want, to school or to work, since they are portable!

There are various ways to “spice up” this recipe, either by adding chopped nuts, like walnuts or by adding white chocolate chips!

If there are any left then you will be wondering how to store them… These berry muffins can be stored for up to 4 days at room temperature.

Description

If you love berries, then this the perfect recipe for you to try! These Muffins are sweet, light and super delicious. You only need a few simple ingredients you definitely have in your pantry.

Ingredients

Mixture

  • 1 3/4 cups (220g) all-purpose flour
  • 2/3 cup (135g) sugar
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1/2 cup (110ml) vegetable oil
  • 2 eggs
  • 1/2 cup (120g) milk mixed with 1 tsp vinegar (or use buttermilk)
  • 1 tsp vanilla extract
  • Lemon zest from 1 lemon
  • 200g fresh or frozen blueberries

Crumb Topping

  • 3 tbsp (45g) sugar
  • 1/4 cup (30g) all-purpose flour
  • 2 tbsp (30g) butter, melted

Instructions

Muffins:

  1.  In a big mixing bowl add in the eggs and the sugar and mix well.
  2.  Add the lemon zest and mix until you have a light yellow color batter.
  3. Add in your vanilla and salt, then mix.
  4. Add in the milk and the oil and mix.
  5. Add the flour and the baking powder and mix well.
  6. Add the berries and fold them gently into the batter using a spatula.
  7. Line a 12-case cupcake tin with paper cases and divide your mixture evenly among the cases.

Crumb topping:

  1.  In a small bowl mix flour and sugar.
  2. Add in melted butter and mix with a fork until little crumbs are formed.
  3. Add the crumbs on each muffin.
  4. Bake for 25 minutes at 180°C
