This recipe is not just delicious but its super easy to make! I usually make this cake during the holidays when my family and friends come over.

Description

This cake is so simple to make and so delicious! It starts off with a chocolate peppermint chocolate sponge and it’s topped with a rich dark chocolate peppermint ganache!

Ingredients

Cake

  • 120gr dark chocolate, chopped
  • 1/4 cup cocoa powder
  • 3/4 cups boiling water
  • 2 1/4 cups all-purpose flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 9 tbsp butter (room temperature)
  • 1 1/2 cups sugar
  • 3 eggs
  • 1 tbsp peppermint extract

Peppermint Ganache

  • 180gr dark chocolate
  • 1/2 cup cream
  • 1 1/2 tsp peppermint extract
  • +SPRINKLES

Instructions

  1. Cake: In small bowl add in your chocolate , cocoa and pour over your hot water. Stir until melted completely and set to the side to cool down.
  2. In a big mixing bowl add in your butter and sugar and mix until nice and creamy using a hand mixer for 2-3 minutes.
  3. Add in your eggs and continue mixing.
  4. Add in your buttermilk, peppermint extract, baking soda, salt, the chocolate mixture we’ve prepared before and mix until combined.
  5. Lastly add in your flour and mix until fully combined.
  6. Pour your mixture in a greased bundt cake tin.
  7. Bake for 50 minutes at 175°C (until a toothpick inserted into the centre comes out clean).
  8. Ganache: In a microwave safe bowl add in your chocolate, cream and place it in the microwave until fully melted.
  9. Add in your peppermint extract and mix until incorporated.
  10. Pour your ganache over your cooled chocolate bundt cake and decorate with sprinkles.
  11. Serve right away.
