Description

These Brownies have a strong dark chocolate flavour and they are topped with an incredible cheesecake filling! Make sure to give this recipe a try!

Ingredients

Brownies

  • ⅔ cup unsalted butter
  • 140gr chocolate
  • 1 cup sugar
  • 2 eggs
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 ¼ cups all-purpose flour
  • ¼ cup cocoa powder
  • ½ tsp salt (

Cheesecake Filling

  • 225gr cream cheese (at room temperature)
  • ⅓ cup sugar
  • 1 egg yolk
  • 1 tsp vanilla extract

Instructions

  1. Brownies: Microwave your butter and chocolate until completely melted and set to the side to cool down.
  2. In a large mixing bowl mix your eggs, egg yolks and sugar and mix for 2 minutes.
  3. Then add in your vanilla extract, salt and chocolate-butter mixture (we’ve prepared before). Mix until fully combined.
  4. Lastly add in your flour and cocoa powder, and mix until your batter is formed.
  5. Cheesecake Filling: In a bowl add in your cream cheese, sugar, egg yolk and vanilla & mix until creamy.
  6. Prepare a rectangular tin with non-stick cooking spray and line with parchment paper. Pour the chocolate brownie batter and smooth out. Pour on top also the filling and using  a knife make swirls in the brownies.
  7. Bake your brownies for 40 minutes at 175°C.
  8. Leave them to cool down fully and then cut them.
