This cake can be made in the form of a loaf or a round cake. If you are planning on making a big cake just multiply the recipe and it will work just fine. This cake its super tasty and everyone will love it. It’s the perfect treat for family, friends and any occasion.

You can also decorate it however you want like Cream Cheese Frosting, sprinkles etc.

You can make this ahead as it can be stored in the fridge and stay moist for up to 5 days. You need to store it an airtight container or covered with plastic wrap to keep it moist and place it in the fridge.

Description

This delicious Carrot Cake its topped with a rich Cream Cheese Frosting… its so easy to make and moist. This will become your New Favourite!

Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup brown sugar
  • 1/2 cup sugar
  • 1 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • 2 eggs
  • 2 egg whites
  • 3 cups shredded carrots (about 6 carrots)

Instructions

  1. In a big mixing bowl add in your flour, sugar, brown sugar, soda, salt and cinnamon and mix until your dry ingredients are incorporated.
  2. Then add in your oil, buttermilk, vanilla, eggs, egg whites and mix until fully combined.
  3. Lastly add in your carrots and fold them using a spatula.
  4. Prepare a loaf tin or an 8-inches round tin and grease it with non-stick cooking spray. Line the bottom with parchment paper to prevent it from sticking.
  5. Bake in preheated oven at 175°C for 25-30 minutes (until a toothpick inserted into the centre comes out clean).
  6. Decorate on top with some Cream Cheese Frosting and walnuts
