These Blueberry Muffin are the perfect treat for family and friends. I love taking these to work and school as they are super portable and they stay moist and delicious.

You can make these for brunch or even enjoy the as afternoon snack. Blueberry Muffins can be made from ahead and be enjoyed throughout the week.

They stay fresh and fluffy for up to 1 week stored in an airtight container in the fridge or at room temperature. You can also bake them and freeze them for up to 5 weeks, and unfreeze upon request.

Description

Are you looking for an easy and delicious Blueberry Muffin recipe? Then I am sure you will love this one! These Blueberry Muffins are very simple to prepare and are the perfect sweet combination with the muffin batter and the blueberries.

Ingredients

  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 1/2 cup sugar
  • 2 eggs
  • 3 tsp vanilla extract
  • 1 cup greek yoghurt
  • 1/2 cup milk
  • 2 cups blueberries

Instructions

  1. In a large mixing bowl add in your melted butter sugar and mix well.
  2. Then add eggs one at a time and mix in the mixture using a whisk.
  3. Add in the vanilla, yoghurt, milk and mix.
  4. Lastly, add in your flour, baking powder and salt and mix until a nice batter is formed.
  5. Add in your berries and fold them in the mixture using a spatula.
  6. Divide the mixture evenly among 12 cases.
  7. Bake for 25 minutes at 175°C (until a toothpick inserted into the centre comes out clean).
