These Biscoff Cheesecake Bars are ideal to impress your family and friends. They are simple, delicious and really impressive.

You ca make these bars for any occasion, like a weekly snack, birthday parties, gatherings with friends etc.

Description

These Biscoff Cheesecake Bars, start off with a crunchy cookie base, then a cream cheese filling, and topped with thick layer of Biscoff spread.

Ingredients

Cookie Base

  • 200gr Biscoff cookies (crushed)
  • 70gr unsalted butter (melted)

Cream Cheese Filling

  • 50ml Double cream
  • 200gr Cream Cheese
  • 200gr icing sugar
  • 30gr unsalted butter (melted)

Biscoff Layer

  • 300gr Biscoff Spread (melted)

+ more Biscoff Cookies (for top)

Instructions

  1. Start off by crushing your cookies and then add in your melted butter.
  2. Mix well and then add the cookie mixture into a 8-inches square tin. Press the cookies using a spoon or a cup to create an even base for our cheesecake bars. Then place the cookie base in the fridge for about 10 minutes.
  3. In another bowl, add in the cream and mix until stiff peaks.
  4. Add in the cream cheese, butter and mix well.
  5. Lastly, add in icing sugar and continue mixing until everything is incorporated.
  6. Pour the cream cheese filling over the cookie base and smooth the top.
  7. Pour on top as well the biscoff Spread and even it out.
  8. Add more biscoff cookies on top & place in the fridge for at least an hour before serving.
